Does your vinegar contain the Mother?   

Yes! Our vinegar is unpasteurized and never heated, preserving the Mother and all the natural benefits it provides. 

What is a "Mother" of vinegar?

The "Mother" of vinegar is a natural substance made of good bacteria and tiny fibers that form during the vinegar-making process. It looks kind of like a jelly-like mass floating in the vinegar. This "Mother" helps turn alcohol (like wine or cider) into vinegar and can be used to start making new vinegar. It's full of healthy probiotics and is usually found in raw, unfiltered vinegars.

How should I store my products?

Our products have a shelf life of over 5 years, thanks to their acidic content. While they don’t require refrigeration, the choice between room temperature and cold storage comes down to personal preference. Just be sure to store them in a cool, dark place, away from direct sunlight, when not in use.

What is the vinegar making process? 

All of our vinegars are made from scratch.  

We use apples, pears, cherries, grapes, and berries from our USDA certified organic farm (and a select few other local fruit providers). The juice is then fermented into a quality alcohol and moved into aging vessels for another 6 months. We then move the wine/cider into smaller vessels to begin the Orleans method of vinegar making.   

The Orleans method of vinegar making is a slow, traditional French technique which requires the vinegar to age for 10 months or more. Ours typically take at least 18 months from start to finish.  

Unlike most store bought vinegar, which is based on rapid, forced fermentation and flushing the wine with oxygen using vinegar generators – our method produces a high-quality, flavorful vinegar with a developed taste and fragrance.  

Crafted with patience and precision, our process speaks for itself in every bottle. But we will let you be the judge of that!

Is your vinegar gluten- and sugar-free?  

All our vinegars are gluten- and sugar-free except for our Beer Malt vinegar. The Beer malt contains barley, which contains gluten.
