I was looking for some interesting, quality made, "locally made" items for Christmas gifts and came across this cider and the Donkey Provisions website. Even though not local to me, as I am in Ohio, this fire cider vinegar is exactly what I was looking for. I ended up ordering five bottles to give as gifts and to keep one for myself. First of all, the packaging is so great! The donkey logo is fun and the quality of the bottle shows the maker really cares about their product. The cider itself is potent! I've used it several times already to make "quickle" purple onions and it adds a nice little kick to them. Per the instructions, I have refrigerated the bottle after opening mine in December and the vinegar has kept well. I gifted a bottle to my son and he tries to take daily shots of it as a health remedy. The heat is subtle and not overbearing, I am sensitive to spicy food, but I can handle the heat of this vinegar on a handful of french fries, before it starts to build up and becomes too much for me! Will purchase more bottles in the future as gifts and for our own pantry.
